Baked Lemon Salmon

Salmon is a nutrient powerhouse. Full of protein and good healthy fats and really quick and simple to make. It tastes even better baked with lemon and black pepper and served with a delicious yet light yoghurt sauce! Make ahead and even eat cold on the go for a super healthy and quick lunch.

2 Salmon Fillets

1 lemon, thinly sliced

Black Pepper

Brown rice, broccoli or avocado and salad  + yoghurt dressing (ingredients below) to serve

Serves 2


Yoghurt Dressing

100g Greek Yoghurt (I used Rachel’s organic natural set¬†yoghurt)

Handful of Chopped dill

Half a lemon squeezed

drizzle of hot sauce (optional)

Heat the oven to 180 degrees

place the salmon on tinfoil and top with the lemon slices and black pepper,

wrap up the tinfoil and cook in the oven for 20 minutes (I like to finish it off in the grill for 5 for crisp it up)

whilst cooking mix all the ingredients for the sauce and cook your rice/brocolli or prepare your salad and serve with the salmon,

Enjoy warm or eat cold as a make ahead lunch,
