Rachel’s Skinny Brownies

Recently, the lovely people at Rachel’s organic yoghurt were kind enough to send me some vouchers to give their different flavours a try! So, I thought this would be a great excuse to get creative in the kitchen… I find that yoghurt is such a diverse and delicious food already that it can easily be eaten and enjoyed, alone as a snack or alongside a powerhouse of nutrients in the form of berries, nuts and other fruits. However, it can also work amazingly at replacing and reducing the fat in many recipes. I decided to give it a go and swap the butter in the traditional, basic brownie recipe with Rachel’s Greek style set yoghurt and mashed banana. The addition of fruit meant I could use less sweetener so I decided to used coconut sugar as it is less refined. Also, using oats and gluten free baking powder made this recipe gluten free. I even used my lovely work colleagues as guinea pigs to see if they could tell the difference and they could not guess that these were healthy brownies! So give it a go if you fancy a healthier, gluten-free, refined sugar and virtually fat free chocolatey treat.

Ingredients

1 Banana, Mashed

80g Coconut Sugar

60g Rachel’s organic Greek style Set yoghurt*

1 Large Free Range Egg

1 tsp sugar-free vanilla syrup or extract

60g Oats, ground into flour

40g Cocoa (or Raw Cacao) Powder

1/2 tsp Baking Powder (gluten free if required)

Pinch of salt

Optional (but super tasty) extras – Handful of dried cherries and 70% dark chocolate chips

 

Method

Heat the oven to 170 degrees celsius

Whisk/Mix the banana, coconut sugar and yoghurt until well combined,

Add the egg and vanilla and whisk further,

In a seperate bowl mix the oat flour, cocoa/cacao powder, baking powder and salt and gently fold the wet mixture into the dry until just about mixed (you dont want to over mix)

Stir in the cherries and chocolate and add to brownie dish then bake for 20-25 Minutes

Remove from oven and dish and enjoy warm or leave to cool and serve with Rachel’s organic Greek yoghurt with honey and fresh berries for a delicious dessert.
