Vegan Protein Cookie Dough Bowl

Sorry for the buzz word heavy title but I wanted to get them in there to show how incredible this bowl actually is! I love cookie dough, my birthday cake was a lovely raw vegan salted caramel cake with cookie dough balls from Simone’s the Healthy Bakers in Manchester (read more here) because I couldn’t decide if I loved cookie dough or salted caramel more…. Don’t get me wrong, I love oats but sometimes you just wanted a break and what better way than to replace them with a lower carb, higher protein and all the good fats breakfast bowl. Super simple and can be made ahead theres no excuse not to give this a try! This is adapted from a quite a few different recipes out there so I cannot take full credit but this is my favourite little version…

Ingredients

20g Soy Protein (I use Pulsin and Beyond but any vegan protein is fine)

25g Cashew Butter

5g Maple syrup (or honey if not vegan) and more to drizzle on at the end

1 tsp Vanilla bean Paste (or extract)

100ml Almond Milk

15g Cacao Nibs

1 medium Banana, mashed

Serves 1

 

Method

Mix together all of the ingredients apart from the banana and refrigerate until you are ready to eat,

When ready to eat, mash the banana and mix the pre-mixed mixture into the bowl alongside the banana and mix together,

Top with fruit of choice, a drizzle of maple syrup and I any other topping of choice… Enjoy!
