Carrot and Courgette Waffles

After the successful creation of my carrot and courgette fritters I wondered if it would be possible to re-create them in waffle form (since I bought a waffle maker I pretty much just wanted to waffle everything!). Anyway, it worked! Woo! So here is my waffe recipe which works perfectly with poached eggs and kale or treat yourself and add bacon and baked beans.

Ingredients

1 large carrot, peeled and grated

1 courgette, grated

20g buckwheat flour

1 egg

1/2 tsp dried chives

salt and pepper to season

Olive oil spray

Serves 1

 

Method

Heat up your waffle maker,

place the courgette and carrot in the middle of a tea towel and squeeze out all the moisture,

mix the egg and buckwheat flour in a dish and add the vegetables,

Add chives, season and spray waffle maker with oil,

Place mixture evenly into the waffle maker (this makes one waffle),

cook for 3-5 minutes until fully cooked and starting to crisp/brown – the waffle maker will indicate when it should be ready so you can check then

serve with poached eggs and sides of choice!
