Acai Bowl

Many of you may be thinking what the heck is an acai bowl?! The word acai is pronounced ah-sah-EE and is a small, dark purple, berrylike fruit with a juicy pulp. It is an indigenous berry commonly found in the rain forests of the Amazon and is rumored to be an absolute miracle berry for weight loss and anti aging. Much of this is still in debate, however, what we do know is that blended up with some extra fruit and topped with a selection of delectable toppings it can create a delicious and healthy breakfast!

Ingredients

1 x 100g pack of frozen acai (I managed to find mine in tesco)

1 Banana, chopped and frozen for an hour

Handful blueberries

1/2 cup water

1 tsp honey (or any sweetner to keep vegan, omit if desired)

Toppings –

Nutty Granola

Alpro yoghurt,

More sliced banana

Assortment of berries, kiwi, peaches etc

Coconut Flakes

Anything you fancy really!

Serves 1-2 depending on portion desired

Method

Break up the acai package and add to your high power blender with the frozen banana, honey, water and blueberries and blend until thick and smooth!

Serve in a bowl and cover with your toppings, then enjoy this delicious breakfast.

{Top Tip – be careful with going overboard on the toppings – the weight loss possibility will stay just a possibility if you add 2 handfuls of granola…!)  <3 xx
