Turkey Mince Bolognese

One of the first recipes I learnt to make by myself was spaghetti bolognese. This was one of my dads set weekly meals, mainly because it was the only way to trick me into eating 5 portions of vegetables without realising!

I know now that switching turkey for beef mince makes this dish even more nutritious and using courgetti instead of spaghetti makes this a less, over-indulgent weeknight dinner.

Ingredients

1 tsp Olive oil

500g Turkey Mince (2% fat)

1 Onion, finely chopped

1 large garlic clove, crushed

1 carrot, peeled and finely chopped

1 red pepper, finely chopped,

1 small leek or stick of celery, finely sliced,

100g mushrooms, finely sliced

1 tsp balsamic vinegar

2 x 400g tin chopped tomatoes

1/2 tsp Oregano

1/2 tsp Basil

2 large bay leaves

Salt and pepper to taste

 

Method

Firstly, chop all the vegetables ready so this is really simple to assemble (I use the food processor when I am feeling lazy but be careful not to over process!),

Heat the oil on a medium high heat in a pan and add the turkey mince and fry until completely white all over,

Remove mince from the pan and place into a dish ensuring you drain all the oil back into the pan and add the onion,

Cook the onion for 5-10 minutes until translucent and add the garlic,

Cook another minute or so and re add the turkey mince, carrot, pepper, leek or celery and mushrooms and cook for another 5 minutes,

Add the splash of balsamic vinegar and cook down for a few moments to remove the acidity,

Add both tins of chopped tomatoes, a drop of water, oregano, basil, bay leaf and season,

Bring to the boil then turn to a very low simmer for an hour and a half until all the vegetables and mince have melted into a delicious tomato sauce,

Remove the bay leaves,

Serve with spiralized courgette or layer with leek or aubergine and cheese (I used nutritional yeast) and bake for 30 minutes.
