Sausage and Sweet Potato Hash

The lovely people at Grandads Sausages provided me with some delicious sausages so I knew the first thing I had to make it my sausage and sweet potato hash with baked eggs. The crispy onions, roasted sweet potato, flavoursome sausage and runny yolk makes this the perfect breakfast, lunch or easy dinner. Dont worry, you can easily substitute for vegetarian sausages for all the non-meat eaters!

Olive Oil

200g Sweet potato, cut into small cubes

1 tsp mix of Sage, thyme and parsley

Red onion, medium sliced

1 good quality Sausage (meat or vegetarian)

1 garlic clove crushed

2 free range eggs

Serves 1


Heat the oven to 180 degrees

Add the sweet potato, herbs and a drizzle of olive oil into a roasting tray and roast for 30 minutes,

Heat the skillet (or frying pan if you do not have a skillet) over a medium high heat, add a drizzle of olive oil and the red onion; cook until starting to simultaneously soften and brown,

Remove the onions and add to the sweet potatos in the oven along with a crushed garlic clove,

Heat a tiny bit more oil and add your sausage; cook until browning then break up with a spactula and cook for another minute before adding to the oven,

After 5-10 minutes remove everything from the oven and either add back to the skillet, crack in two eggs and cook for another 12 minutes approx in the oven till the egg white is opaque but the yolk is not too stiff, or serve as a hash with sides of choice..

{Top tip – alternatively you could double up the hash recipe and poach the eggs separately to serve a few and this is just as tasty} <3 xx
