I love cookie dough! Its one of the tastiest treats but also can be very, very naughty and obviously not vegan. So I decided to try and replicate the idea in my healthier porridge breakfast and it worked! Make a batch the night before and just reheat for 1 and a half minutes in the morning before adding the milk and fruit for a tasty yet healthy breakfast.
2 Large Ripe Bananas
150ml Almond or Soy Milk
60g Rolled Oats
Big drizzle of Sugar free vanilla syrup or extract
10g Cacao Nibs
Preheat the oven to 200 degrees,
Mash the banana in your small oven proof dish and add the milk,
Add the oats, cacao nibs and vanilla syrup then make sure its all mixed up together,
Place in the oven and cook for around 30 minutes until browning on top, halfway through you can give it a little stir to ensure you get some more crispy bits,
If not brown enough turn the oven high and cook for a further few minutes,
Serve warm gently mashed up and topped with extra almond or soy milk, a sprinkling of cacao nibs and some fresh berries or more banana… and enjoy!
