Blueberry and Banana Baked Oats

Gooey, melty blueberries, creamy banana oats, a slight nutty crunch and a gentle hint of cinnamon – what more could you want from a delicious breakfast. Enjoy these vegan baked oats straight out of the oven or leave to cool and reheat in a microwave for a quick and easy yet divine breakfast.

Ingredients

2 large ripe bananas

60g rolled oats

100ml almond milk (or any milk)

1/2 tsp cinnamon

handful of raisins and crushed walnuts/pecans

maple syrup

handful of blueberries

serves 2

Method

Preheat the oven to 180 degrees

In a small casserole dish mash one banana with the oats and milk then add the cinnamon, raisins and nuts and a small drizzle of maple syrup

Add the blueberries and stir gently then top with slices banana, a little bit more cinnamon and a final small drizzle of maple syrup (this helps to caramelise the banana slightly)

Bake for 25-35 minutes until the oats are starting to brown

Serve with coconut or soya yoghurt and extra fruit or more crushed nuts

[Top Tip – Make extra and refrigerate for a few days – this is easily reheated at work or before a busy day]
