Bircher Muesli

Okay, so as we know a few years ago I would have scoffed at the thought of porridge but uncooked oats soaked overnight with fruit? that would have been one of my worst nightmares! oh how times change… Anyway, I have perfected my bircher muesli with the addition of grated apple and (soy) yoghurt … mmm so creamy and delicious! Super filling without being heavy… Perfect Summer Breakfast.



1 medium apple

30g rolled oats

60g yoghurt of choice

100ml milk of choice

tsp chia seeds

handful dried fruit

a few pecans gently crushed


Vanilla extract



Julienne or grate your apple into a few pieces of kitchen towel and ring out to remove as much water as possible.

In a bowl or tupperware add yoghurt and of milk (I used alpro plain and coconut rice milk to keep it vegan). Stir and add oats, a dash of cinnamon, a drizzle of vanilla extract,  dried fruit, the apple, chia seeds, pecans then stir till all mixed together evenly. (at this point check that there is still a bit of liquid but not too runny- add more milk if too stir to mix properly).

Cover and refrigerate overnight, serve with berries and maple or date syrup (or honey if not vegan)… then enjoy!!
