Healthy Pecan Banana Bread

mmmmm banana bread… Ok so I used to HATE bananas and everything banana flavoured (I would have a tantrum if the doctor dared to give me the banana call ok rather than strawberry…) but since developing my new eating habits I have actually learned to love the taste! I found a recipe from cookie and Kate online and adapted it slightly to fit with what I had.. It was so tasty I wanted to share it with you all 🙂 ! …

ingredients

1/3 cup coconut oil

1/3 honey

heaped tsp maple syrup

2 free range organic eggs

1/2 tsp vanilla extract

1/2 tsp cinnamon

2 over ripe (brown and spotty) bananas mashed

tsbp milk

1tsp baking powder

1 cup coconut flour

3/4 cup of wholewheat or normal plain flour

Handful of pecans gently crushed

handful of dried cherries (optional but tasty)

 

method

Heat the oven to 160 degrees

whisk the coconut oil and honey/maple syrup and add the eggs, keep whisking and add the mashed banana (I used kitchen aid for ease but anything will suffice)

add the vanilla, milk, cinnamon and whisk again – add the baking powder and two types of flour and fold in, when just about mixed add in the pecans and cranberries and pour into a lined loaf tray

cook for 55-60 minutes depending on oven (until bouncey to touch and Golden brown all over)

serve with Greek yoghurt and berries for a tasty breakfast or on its own as a snack
