Baked stuffed aubergine

Sometimes you just need a quick after work veggie packed dinner, this easy aubergine dish takes 15 minutes prep and 30 minutes to cook, gives you a great vegetable hit and tastes delicious served with a salad, even my super fussy mother loved it!!

Ingredients

1 large aubergine

1 tsp olive oil

1 red onion

1 clove of garlic, crushed

1 courgette

handful cherry tomatoes

1 heaped tsp tomato purée

1/4 tsp sweet paprika

pinch of white pepper

50g feta cheese

serves 2

 

Method

Slice the aubergine in half and scoop out some of the flesh brush with olive oil and place in the oven on a low heat,

In the meantime, heat the remaining olive oil in a frying pan and add finely sliced red onion, quartered and finely sliced Courgette then add garlic and chilli and fry till softening,

Add sliced cherry tomatoes, tomato purée, sweet paprika, white pepper and cook for another 5 minutes adding water if sticking,

Remove aubergine from oven and add the mixture to each half, top with crumbled feta and bake at 180 for 30 minutes

serve with a yoghurt tahini dressed salad -(mix a tbsp of yoghurt with 1/2 tsp of tahini and some lemon juice)
