Roast Vegetable Tagine

This dish is inspired by a few different recipes I’ve followed in the past, it’s a quick easy vegetarian dinner that’s jam packed with healthy veggies and flavour.

Ingredients

1 tbsp olive oil

 

1/2 tsp cumin seeds

1 x aubergine cubed

1 x courgette halved and sliced

1 x red pepper chopped into squares

1 x red onion sliced into chunks

1 tsp cumin

1 tsp cinnamon

1 x Tin chopped tomatoes

handful dried apricots soaked in water

drizzle of honey

1/2 tsp coriander leaf

Sea salt and pepper to season

Serves 2

 

Method

heat the oven to 190 degrees – add the veggies, half the olive oil and cumin seeds to the veg and roast for atleast 15 mins,

heat the remaining olive oil on a medium heat with the cumin and cinnamon for a few minutes and drizzle over the vegetables and roast them for another 10 minutes till soft but not soggy

Meanwhile, using the pan you heated the oil with add the tin of chopped tomatoes, honey and apricots and bring to the boil then reduce for 10 minutes, add the vegetables and cook for another few minutes all together for the flavour to merge

Top with coriander leaf and serve

I served mine with whole grain bulgar wheat steeped with some vegetable stock, lemon juice, sultanas and corriander topped with toasted almonds but you can serve with couscous or cauliflower rice
