Chicken noodle soup

One thing I hate is food waste… So I try and find recipes that use up everything that gets left over.. A great recipe for this is chicken soup – simple, quick, easy and delicious…

Ingredients

leftover chicken carcass

big handful of barley, red lentils, yellow split peas, green/brown lentils

chicken stock cube

1 large brown onion chopped

2 big carrots peeled and chopped

1 big potato peeled and cubed

Handful chestnut mushrooms

Sea salt, black pepper and mixed herbs for seasoning

Handful wholewheat vermicelli noodles

 

Method

pull any meat that’s left off the carcass and put to one side and place the carcass into either a pressure cooker with lots of water for 20 minutes or a pan of water and boil for an hour

sieve this water into another pan and remove any meat that was left on the carcass that has become apparent

In the meanwhile boil your lentils, barley and yellow split peas for 10 minutes and add to the liquid along with the vegetables and an extra chicken stock cube- season with salt, pepper and some mixed herbs and cook in pressure cooker for 20 more minutes or simply boil until vegetables and pulses are soft

add the wholewheat vermicelli and chicken and leave to simmer for 10 minutes

eat straight away or refrigerate for up to 3 days
