Black bean 'shakshuka'

Shakshuka is a tasty tomato based, baked egg dish. My newest take on the dish involved adding black beans
for added protein and cheddar cheese instead of feta; giving it a slightly Mexican twist. This is an extremely tasty dish for breakfast or lunch especially served with toasted sourdough or cereal pitta bread.

Serves 2

Ingredients

Tsp Coconut oil

1 small red onion sliced

tsp sweet smokey paprika

1/2 tsp ground coriander

1 x tin black beans

1 x tin chopped tomatoes

sea salt and white pepper to season

4 x eggs

40g cheddar cheese

chilli flakes, coriander leaf and chilli oil to garnish

sourdough or cereal pitta to serve

 

Method

Heat a frying pan or skillet if you have one to a medium heat and add the coconut oil,

cook the onion till soft and browning and add the paprika/corriander and rinsed black beans and cook for a few more minutes,

add the tin of chopped tomatoes and simmer for 10 minutes, season with the salt and pepper,

make a few space in the tomato mixture and break each egg into the spaces, top with the cheese and bake in the oven at 190 degrees for 10-15 minutes until the whites are cooked but the yolks are still abit runny,

Garnish and serve with sour dough or wholewheat cereal pitta bread.
