Creamy Cod and Chorizo
A perfect low carb, quick and easy, after work dinner that takes literally less than 15 minutes from start to finish …
Ingredients
1/2 tsp olive oil
Small brown onion, thinly sliced
6 slices of cooked thin chorizo slices
6 chestnut mushrooms, sliced
handful of cherry tomatoes, halved
1 heaped tsp lowest fat cream cheese
2 boneless cod fillets
cracked black pepper to season
tenderstem brocolli to serve
Serves two
Method
heat the olive oil to a medium heat and add the onions, cook for a few minutes and add the chopped chorizo slices
cook till the onions are softening and starting to brown and add the sliced mushrooms and halved cherry tomatoes and cook for 5 minutes
in the meantime heat a frying pan to a medium heat with a drizzle of olive oil and cook the fish for a few minutes on each side
Then stir in the cream cheese into the mushroom/onion/chorizo mix and a few drops of water to thin it into a sauce
serve the fish with brocolli and top with the sauce
This versilite sauce could be used with whole grain pasta or on top of chicken instead
